The plastic sets you see pictured from more elite events are pretty much all from before the 1970’s. Since then you will see wood sets.
When looking at sellers you will see more Wood set options than Plastic. When most people talk of buying a nice set, it is usually Wood.
Wood pieces are more expensive than plastic ones.

In all elite chess tournaments we see wooden sets more often than plastic.
Plastic ones are preferrable for rapid games and daily use.
Chess has its roots a royal game and the authenticity and elegnace comes from wooden sets than plastic.
Wooden chess sets are also used for décor purposes while it is not the same for the plastic chess.
Wooden chess sets lasts longer if stored in proper condition whereas plastic sets may become brittle with age depending upon the composition.
Wood is definitely an eco friendly product. Expert says that playing with a wooden chess set improves our game. They are also very impressive to look at and can be used as a home décor.
